A qualified pastry chef by trade, Robert developed his skills in a number of award winning restaurants, hotels and bakeries within the UK during the early 90’s specialising in French patisserie.

During the late 90’s Robert took an opportunity to
move into a managerial position working within the airline food and logistics sector whilst studying
business administration before being seconded
to Ireland in 2002 to support the Aer Lingus senior
management team. During Roberts’s tenure in
Aer Lingus he initially held the position of Catering Director, responsible for all In-flight catering services including kitchen production, vendor management
and menu development for the national airlines
network. After three successful years Robert moved
to direct the airlines global cargo division followed by
the running of Dublin airport.

Robert returned to his craft and passion for high
quality patisserie together with his natural flare, creativity and attention to detail in establishing his
new venture. Le Patissier is quickly becoming one
of the leading patisserie suppliers in Ireland and is defining new levels of quality both in product and customer excellence within this sector.
